To prepare the mincemeat filling, combine the raisins, currants, citron, cherries, pineapple, walnuts, cider, rum, brown sugar, molasses, lemon juice, orange zest, cinnamon, allspice, cloves, nutmeg, and salt in a large saucepan.

Bring to a simmer over medium heat and cook, stirring frequently, until the liquid has been absorbed and the mixture has thickened about 20 minutes. Let the mincemeat cool to room temperature before using it in your pie.

To assemble the pie, roll out a pie crust and place it in a 9-inch pie dish.

Fill the crust with the cooled mincemeat filling. Roll out a second pie crust and place it on top of the filling, pressing the edges together to seal the pie.

Use a fork to crimp the edges of the pie crust. Cut a few slits in the top of the pie to allow steam to escape while it bakes.
