  • 3 cloves of garlic

  • 1/4 teaspoon of black pepper
  • 2 egg yolks
  • 1 teaspoon of lemon juice
  • 1 cup of extra-virgin olive oil

  • The first step in making aioli sauce is to crush the garlic cloves. You can do this using a garlic press, a mortar and pestle, or simply by mincing the garlic with a sharp knife.
  • Once you've crushed the garlic, add it to a mixing bowl along with the salt and black pepper.
  • Next, add the egg yolks to the bowl with the garlic and spices. Whisk the mixture together until it is well combined.
  • Now it's time to add the olive oil. This is the most important step in making aioli sauce, as the oil must be added slowly and gradually to allow it to emulsify with the other ingredients.
  • Start by adding just a few drops of olive oil to the egg yolk mixture, whisking continuously. Once the oil has been fully incorporated, you can add a bit more, continuing to whisk as you go.
  • Continue adding the olive oil slowly and gradually, whisking continuously, until the sauce becomes thick and creamy. You should end up with a cup of aioli sauce that is rich and flavorful, with a smooth and creamy texture.
  • Once the aioli sauce has reached the desired consistency, it's time to add the lemon juice. This will help to balance out the flavors and give the sauce a tangy kick.
