Even though we've tried and failed with numerous iterations of Maggiano's lemon cookies, I'm happy to report that this recipe for Vera's Lemon Cookies is a resounding success.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup confectioners’ sugar

Instructions
 

  • Preheat your oven to 350°F and line a baking sheet with parchment paper. This will help the cookies to cook evenly and prevent them from sticking to the pan.
  • Whisk together the flour, baking powder, and salt in a medium-sized bowl. Set this mixture aside for now.
  • In a separate large bowl, beat the butter and sugar together until they are light and fluffy. This should take about 2-3 minutes. Add the eggs, one at a time, beating well after each addition.
  • Next, add the lemon zest and lemon juice to the batter and mix well to combine. Gradually add the flour mixture to the batter, stirring until it is well incorporated.
  • Scoop the dough onto the prepared baking sheet using a cookie scoop or spoon. Space the cookies about 2 inches apart to allow for proper spreading during baking.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until they are lightly golden around the edges. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
