- 1 lb. boneless chicken breasts
- 1 cup frozen mixed vegetables
- 1 cup shredded cabbage
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 clove garlic minced
- 1 teaspoon ground ginger
- 1/2 teaspoon ground black pepper
- 12 small scallions white and green parts only, cut into thin strips
Preheat oven to 375 degrees Fahrenheit.
In a large bowl, combine the chicken, frozen mixed vegetables, shredded cabbage, soy sauce, honey, sesame oil, garlic, ginger, black pepper and scallions. Mix well and set aside.
Spread each chicken breast in a single layer on a baking sheet. Bake for 25 minutes or until the chicken is cooked through and the vegetables are tender.
