- 2 tbsp lemon pepper
- 1 tbsp dried basil
- 1 tbsp poultry seasoning
- 2 tbsp olive oil
- 6 p Cornish game hens about 1 ½ pounds each, rinsed and dried thoroughly
- 1 p green bell pepper diced into large pieces
- 2 p stalks of celery diced into large pieces
- 1 p onion diced into large pieces
Preheat the oven to 400 F.
Combine the salt, lemon pepper, dried basil, and poultry seasoning in a small bowl.
Rub the olive oil all over the hens and sprinkle them with the salt mixture.
Place the hens on a baking sheet with a lot of space between them. You may need to use two baking sheets.
Place some green bell pepper, celery, and onion in the cavities of the hens.
Bake the hens for about 45 minutes to 1 hour, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165 F.
