Step 1: Cook the Wheat Kernels
The first step in making Mote con Huesillos is to cook the wheat kernels. Start by adding the cooked wheat kernels to a large pot and covering them with water.
Bring the water to a boil and then reduce the heat to medium-low. Cover the pot and let the wheat kernels simmer for 45 minutes to 1 hour, or until they are tender.
Step 2: Soak the Dried Peaches
While the wheat kernels are cooking, it's time to soak the dried peaches. In a separate pot, add the dried peaches, cinnamon sticks, sugar, and 8 cups of water.
Bring the mixture to a boil and then reduce the heat to low. Let the peaches simmer for 20-30 minutes, or until they are soft and tender.
Step 3: Combine the Wheat Kernels and Peaches
Once the wheat kernels and peaches are cooked, it's time to combine them. Using a slotted spoon, remove the cinnamon sticks from the peach mixture and add the mixture to the pot with the cooked wheat kernels.
Be sure to add some of the peach slices to the pot as well, as this will add flavor and color to the drink.
Step 4: Chill the Mixture
Once the wheat kernels and peaches are combined, it's time to chill the mixture. Allow the mixture to cool to room temperature and then transfer it to a jar or pitcher. Chill the mixture in the refrigerator for at least 2 hours, or until it is completely chilled.
